Watermelon, Arugula, & Feta Summer Salad

This Watermelon, Arugula, Feta Salad is summer in a bowl. Say goodbye to boring salads and hello to bursts of flavor and a peppery bite!


This salad is not only flavorful, but it also provides a variety of textures, nutrients, and is sure to be a crowd pleaser. Check out the nutrition information below.


Nutrition Profile:

  • Lime: Limes and their juice are a good source of vitamin c and folate. They are a great antioxidant helping to support the immune system and can aid in the prevention of heart disease.

  • Honey: A natural sweetener that your body knows how to process. When using local raw honey it can help with seasonal allergies.

  • Arugula: A peppery leafy green that's packed with nutrients including: Vitamins A, C, and K. It also is a great source of fiber, folate, calcium, magnesium, and potassium. This powerful green can help to decrease inflammation and can help detox the liver.

  • Watermelon: A good source of vitamin c, but the stand out for watermelon is it's diverse phytonutrients. These nutrients make watermelon great as an anti-inflammatory, antioxidant, and cardiovascular treat. Enjoy it knowing you are getting a good dose of lycopene and if you're an athlete it's great for recovery.

  • Cucumber: A great source of Vitamin K and also provides B and C vitamins. It's also an excellent source of the mineral molybdenum. Surprisingly the seeds of a cucumber also pack a nutrient punch of flavonoids.

  • Walnuts: Omega 3 fats and antioxidants.

  • Feta: A good source of calcium, iron, magnesium, and can provide probiotic benefits. Don't forget to choose a quality sourced option.



Watermelon, Arugula, & Feta Salad with Honey Lime Vinaigrette


Honey Lime Vinaigrette Ingredients:

Zest of 1 Lime

1/4 C. Fresh Lime Juice

1 T. Honey

1/4 tsp. Sea Salt

1 T. Citrus Champagne Vinegar

1/4 C. EVOO


Salad Ingredients:

5 oz. Arugula

2 C. Watermelon, chopped

1/2 C. Cucumber, chopped

1/2 C. Walnuts, chopped

3 oz. Feta

Chicken or Shrimp (optional)



Directions:

  1. In a half pint sized mason jar add ingredients for dressing. Place lid on tightly and shake.

  2. In a large bowl add arugula, 1 cup of watermelon, 1/2 cup cucumber, 1/4 cup walnuts, and 1.5 ounces of feta. Toss Lightly.

  3. Add remaining watermelon, feta, and walnuts to the top for presentation.

  4. Top with Chicken or Shrimp.

  5. Serve dressing on side. Enjoy!
